Stuffed Roasted Pasillo Peppers

Pasillo peppers (big ones)
oregano
white onion (mild)
corn
S&P
Monterey jack cheese or cheddar & mozzarella
maybe add small shrimp

Roast and skin peppers (don't rinse)
Core and stuff with mixture
Cover with foil in baking dish
Bake at 350° for 15 minutes
